Cold-pressed from the rind of a small Calabrian citrus that grows almost nowhere else, bergamot oil is electric green, faintly bitter, faintly floral. It is the spark that opens almost every great fragrance — the reason a perfume feels alive in the first thirty seconds.

It is also what makes Earl Grey tea Earl Grey, and what gives eau de Cologne its name.
